Vitamin E and PUFA Balance in Poultry Nutrition
The relationship between vitamin E and polyunsaturated fatty acids (PUFAs) is one of the most important nutritional interactions in poultry feeding. I’ve seen more cases of vitamin E deficiency on paper than in actual lab results, but when the PUFA content of the diet changes without adjusting vitamin E, deficiency can occur rapidly.
The Connection
PUFAs are highly susceptible to oxidation. The double bonds in their chemical structure are targets for free radical attack. Once oxidized, PUFAs produce lipid peroxides that damage cell membranes, proteins, and DNA.
Vitamin E is the body’s primary defense against lipid oxidation. It sits in cell membranes and neutralizes free radicals before they can attack PUFAs. The more PUFAs in the diet, the more vitamin E is needed to protect them.
The Ratio
The relationship between vitamin E and PUFAs is dose-dependent. Research shows that for each 1% increase in dietary PUFAs, the vitamin E requirement increases by approximately 5-10 IU/kg of feed.
A typical corn-soy diet contains 2-3% PUFAs, mainly linoleic acid from soybean oil. At this level, 30-50 IU/kg of vitamin E is adequate.
If the diet includes sources high in PUFAs, the vitamin E requirement increases accordingly:

Practical Application
When I formulate feeds with added fat, I adjust vitamin E based on the fat source:
- Standard broiler diet (2-3% added fat, soybean oil): 40-50 IU/kg vitamin E
- High-energy broiler diet (4-6% added fat, mixed sources): 60-80 IU/kg vitamin E
- Diet with high omega-3 sources (fish oil, flaxseed): 100-150 IU/kg vitamin E
The omega-3 PUFAs (EPA and DHA) are even more susceptible to oxidation than omega-6 PUFAs. Diets with fish oil or flaxseed need substantially more vitamin E.
Meat Quality and Shelf Life
The vitamin E and PUFA balance affects meat quality after processing. Meat from birds fed high-PUFA diets has softer fat and is more susceptible to oxidative rancidity during storage. Higher vitamin E levels in the feed improve the oxidative stability of the meat.
In a trial at the University of Arkansas, broilers fed a diet with 4% added fat and 80 IU/kg vitamin E had breast meat with 50% lower malondialdehyde (a marker of lipid oxidation) after 7 days of refrigerated storage compared to broilers fed 30 IU/kg.
Interactions with Selenium
Vitamin E and selenium work together in the antioxidant system. Selenium is a component of glutathione peroxidase, which neutralizes peroxides inside cells. Vitamin E stops lipid peroxidation in cell membranes.
When PUFA levels are high, both vitamin E and selenium become more important. I increase selenium to 0.35-0.40 ppm (from 0.25-0.30 ppm) when feeding high-PUFA diets.
Practical Formulation
For a broiler finisher diet with 5% added poultry fat:

Signs of Imbalance
When the vitamin E to PUFA ratio is wrong, the signs are:
- In the feed: Rancid smell, reduced feed intake, oxidation of other vitamins
- In the bird: Reduced growth, increased oxidative stress, lower meat quality
- In the meat: Off-flavors, discoloration, reduced shelf life
The most obvious sign in the feed is rancidity. I check all fat sources for peroxide value (PV). Fresh fat should have a PV below 2 mEq/kg. Fat with PV above 5 mEq/kg should not be used without additional antioxidant protection.
Bottom Line
Vitamin E and PUFAs are inseparable in poultry nutrition. As we push for higher energy diets with more added fat, we must adjust vitamin E accordingly. The 40 IU/kg standard from older guidelines is not enough for modern high-energy diets. Adjust vitamin E to match the PUFA content of your formulation, and the bird’s performance and meat quality will benefit.
